The latest, current version of Waze (v4.80) was supposed to fix these bugs - and it seems to have done so. Before latest update I've had issues with Waze not respecting neither its own settings nor CarPlay settings for dark mode - even ignoring a recent CarPlay setting to Always Show Dark Maps.
